Roasted Cauliflower
Oven-roasting is a quick and easy way to prepare all kinds of vegetables but cauliflower is especially good. Even those who don't think they like cauliflower will go for this!
1 medium head cauliflower
2-3 T. 100% olive oil
1-2 cloves mashed garlic (optional)
Salt and pepper to taste.
1. Preheat oven to 400 degrees and place oven rack in lower third of oven.
2. Place olive oil in small dish. Put garlic (if using) through a garlic press and add to oil.
3. Slice cauliflower vertically into 1/2 inch slices. (The slices will look like flat "trees.") Arrange in single layer on cookie sheet. Brush with olive oil and season with salt and pepper. Flip slices and brush with remaining olive oil. Season with salt and pepper.
4. Roast for 15 minutes. Turn slices over and return to oven for 10-15 minutes. Cauliflower should be well-browned.
